chicken tomatillo

ingredients

  • 6 chicken breasts
  • 1 onion, sliced
  • 2 teaspoons garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon lemon juice
  • 1 cup tomatillo salsa
  • 1 1/2 cups sour cream

directions

  1. Combine ingredients in slow cooker, except sour cream.
  2. Cover; cook on Low 6-8 hours or High 3-4 hours.
  3. Add sour cream before serving.

i served mine in warm tortillas with cheese… it was even tastier the next day!

dinner last night

this is what i made for dinner last night. the recipe is called Warm Steak and Potato Salad which doesn’t have the most appetizing name but we both really liked it. you can find the recipe here. i discovered two things when making this dish, 1. you can broil steak and it tastes really good and 2. shallots are delicious! the only changes i made were i used balsamic vinegar instead of red wine and i put horseradish on top of the steak before i ate it. i think next time i may put the horseradish in the dressing and i might add some different spices because i couldn’t really taste the tarragon. tonight i’m making chicken tomatillo in the crock pot, hope it’s just as good!

getting ready to head out west

it’s been awhile since my last post…spring is in the air! things are warming up here and we actually had to turn on the A/C a couple of nights. what have we been up to? let’s see… we went to see a show in East Atlanta Village, the band was King Khan and the Shrines. it was so much fun, they had a ton of energy. we’ve been eating at Taco Mac of course and increasing our beer list there. i’m still using the elliptical and try to 4 or 5 days a week. i’m also still on the job hunt. why doesn’t anyone want me??? ha, that’s how i feel sometimes but i try not to get too discouraged. i’m also going to apply for part-time work as well and maybe start classes up again at the local community college here. we ordered a new bed from Macy’s and it’ll be mid-month. we are having our first guest at the end of the month. our good friend from HS, Marlene, is coming for the weekend. soooo… now that we have a place for people to sleep, bring it on!!! we would love to have people visit us anytime.

this Thursday we both head to California for a few days. steve is going to do his annual fantasy baseball league draft and I’m going to stay with my close friend jen since her husband is part of the league too. i’m so excited to go back to CA so soon since our move. it’ll be great to see everyone there and spend some time relaxing. thursday we are going to steve’s brother’s house for dinner and to hang with them. then Friday the boys leave on their road trip to Santa Barbara. Saturday jen is getting a babysitter for the evening and a group of us girls are going to have dinner out followed by some drinks…my oldest bff, kim, is even going to make it down from SF to hang with us on Saturday night, yipee! we also are planning to go the beach if it’s warm enough. i’m just looking forward to hanging out with jen, nolan, maggie & maddie… no matter what we do. jen & i have been good at talking on the phone almost daily but it’s not the same as face to face.

white bean chicken chili

so today i made this chili and i have to say it’s DELICIOUS!!! there were a few thing i had to substitute but i’m sure it wouldn’t have tasted that much differently had i not. first thing, they didn’t have tomatillos at Publix so i had to get salsa verde (which on the jar said “with fresh tomatillos”, so figured it was ok) and the other thing i didn’t use was the fresh corn…i used a can of white corn instead. oh! i also shredded my chicken instead of chopping it because i prefer it that way in soups. i served it with a flour tortilla which i heated and melted shredded cheddar inside, a dollop of light sour cream and a slice of lime. i squeezed the lime into my chili right before i ate it, yummy!!! this chili has the perfect amount of spice and doesn’t leave you heavy at all.

easy irish soda bread

so i made the bread but it wasn’t what i was expecting really so i don’t know that i would make it again. it was extremely dense therefore it was like a brick after it cooled. i did like the flakiness of the outside of it but didn’t care so much for the texture of the inside. it was more like a shortcake i suppose. it would be great with fresh strawberries (which i didn’t have at the time) but i warmed it, buttered it and spread it with strawberry jam for breakfast and it that was really good! anyway, here are some pics.

last night i made baby back ribs again in the crock pot and they turned out just as good as last time. today i’m going to make oatmeal raisin cookies for steve.

it’s raining today and is suppose to until the end of the week. it’s ok though, i enjoy the rain and in GA we actually get the thunder to go along with it. i don’t want any tornadoes though, GA can keep those to themselves.

i finally finished book 7 of the Sookie Stackhouse series and i’m onto book 8. book 7 was such a bore that it took me way too long to get through it…so far book 8 is much better.

i’ve been good at doing the elliptical almost daily, i think i missed 1 day so far. i worked up to 40 mins. last week and yesterday i thought i would push it to an hour, i’m not sure my body was ready. i’m going to go back to 40 mins. today i think…i was exhausted and i can feel it today. i think i just pushed myself too quickly but i’ll get there soon enough.

i’ve heard back from a couple of jobs but just getting answers like “you’re still in the running…” these jobs i applied for back in December!!! i guess they want to take their time in getting the right person but that seems like a long time to me. i also heard from another company yesterday but it’s located in ATL which would be a commute. i told them i was interested though as i feel it can’t hurt to interview. soooo, i’m feeling something will work out soon enough!

tomorrow is already Thursday again, Taco Mac night for us!!! (i don’t think that place will ever get old)

pork chalupas

here i am posting more pics of what i made for dinner. i downloaded a new app called All Recipes and found this recipe for pork chalupas. they turned out really tasty, at least steve & i thought so. steve made his version of the Skinny Girl Margarita to go with them and since it made so much we will probably have a repeat tonight. i’m still applying for jobs, had three interviews but now silence and the waiting game. i’m sure something will happen for me at some point. until then, i’ll keep cooking and baking. we did finally get our elliptical set up on Sunday and i’ve used it everyday this week. we are both ready to get fit and hopefully this will be the way. tomorrow i think i’ll bake some bread…expect more photos!!! :)

baby backs, updates & valentine’s day

here are some recent pictures of things around our house. we made baby back ribs in the crockpot which came out delicious! i bought some new lamp shades for the chandelier since the ones they left weren’t our taste. we picked up the ATP print from the frame shop and placed it on the mantel. friday we are getting the elliptical we ordered from Sole so we can get in shape and i received a dozen roses on Valentine’s Day from steve! things around ATL are pretty good for us.

here is our new home

so i’ve been meaning to post pics for awhile now but i honestly kept forgetting. here’s the link to the slide show. the place is pretty bare still but we are adding to it little by little to make it home. i went to Pottery Barn today to look at their end tables and was happy to find the one i’ve been wanting AND it was on SALE!!! now we are moving the coffee table (that is in the foyer pic) upstairs so steve can use it in his music room. we are also having a print framed for over the fireplace. it is a good memory from a music festival steve & i went to in 2008 in NY and beautiful artwork. anyway, that’s the place for now! if anyone wants to visit they are more than welcome to, we have an air mattress now but will soon get a guest bed that will be more comfortable. signing off for now! :)

super bowl sunday & your taste buds

so Sunday was the Super Bowl and we had over meri, (a good friend from OP), robert (her husband) and erin & william (their two little ones). i had prepared a menu earlier in the week of what i was going to make and just hoped it all turned out well since i’m not the best cook. on the menu was: vegetable chili, hummus, pita chips, carrots, olives, fruit salad, pistachios, grapes, cheeses, crackers, strawberries, beer and something sweet (meri brought yummy brownies).

so back up to Saturday evening where steve & i went out to shop for all the groceries. we went to Whole Foods for the beer, cheeses & crackers since we knew Publix wouldn’t have what we wanted. as i approached the cheese counter i was getting overwhelmed with all the types of cheeses and what would go with what until the friendly man behind the counter asked if he could help. i told him i was wanting a stinky cheese since i had been craving it since i left CA and i knew meri liked stinky cheese as well. he let me sample a few different blue cheeses and then suggested i try Saint Agur which was pretty stinky but tasted delicious!!! i went with that a Robusto cheddar and another cheddar that i can’t remember the name of but it had a black wax around it…anyway, ALL the cheeses were so yummy and i would have never known anything about cheese had i not asked the helpful guy at Whole Foods for recommendations. thanks Whole Foods cheeseman!

this leads me to your taste buds, why do your tastes change??? i would have never tried a stinky cheese had it not been for night at maggie’s which i wrote about in an earlier post. then i started thinking today how many foods there are now that i have never liked or even wanted to try until the past 5 years of my life. things like, beer, olives, hummus, falafel, bloody marys, dirty martinis and of course stinky cheese. i don’t understand it, do your taste buds start to die so you need saltier, more stinky foods so you can taste things??? i still don’t like meatloaf and i’m sticking to that but then again i haven’t tried that in over 20 years now so who knows, maybe i do? the next time i go home and my mom asks me what i want to eat, maybe i will give meatloaf another chance.

tornado watch, better get use to them

it’s been awhile since my last posting…not really sure why i haven’t written since i’m still without work but i just haven’t. today is Sunday, which doesn’t mean much when you currently don’t have a job to go to on Monday but i still sort of get that feeling since it means steve is back to work and i’ll be here alone. i’ve been trying to keep myself busy with 1. the job hunt 2. grocery shopping 3. laundry/cleaning 4. dinner planning and of course 5. T.V. oh! and i have been using the wii Fit Plus all week which has been good because it’s giving me more energy and making me sleep harder at night. steve has football on and the tornado warning keeps popping up for a county to the south of us, we are under a watch until 6pm. so i guess we will keep an eye out for that. haha. it reminds me of living in AR, we never had a tornado but plenty of watches. the city i lived in was nestled in the Ozark Mountains so it was harder for a tornado to reach us, they would usually go north or south to flatter lands. anyway, i guess we left earthquakes behind and added thunderstorms.

friday we went out to dinner at a place called Taco Mac. this place has over 100 beers on tap and it’s pretty impressive to see them all lined up behind the bar. we enjoyed the food and the beer we had so we will definitely visit that place again. plus, they serve wings (which we didn’t try) so we are anxious to sample those.

yesterday we met our HS friend, meri, and her family for lunch in Sandy Springs where they live. it was nice finally meeting her kids and getting to see meri & robert since we had been meaning to see them since we arrived. we met up with them later that evening at the Brunswick Bowl in Roswell and bowled for a couple of hours. it was really a lot of fun watching her kids get so into the game. hopefully we will get to see them again soon. we also went to the DMV earlier in the day so we no longer have our CA driver’s licenses. :(  instead we now have a GA driver’s license which looks like someone made it at home in their garage. haha, not nice but true. i think we will try and do our registration next week, so many things you have to do when you move!!

still raining but i enjoy it, it’s suppose to rain through the night i think and clear off tomorrow. i’m planning on hitting a consignment store tomorrow to see if there are any good finds. we have to fill up this place with a few more things to make it feel more like home. oh! and next week we are picking up a few things i had framed so that should help too. ok, signing off to take a quick nap.
